Molasses cookies
First I must thank my mother for the WONDERFUL recipe she invented today... it was amazing, the best cookie recipe I have ever tasted, no doubt !!!
These cookies remind me of the soft Christmas cookies we made with gluten before I found out to be Celiac.
I really hope you take a little time for this recipe, with all sure, it will become one of your favorite too.
ingredients:
1 cup. molasses
3 cup. gluten-free flour (1 1/2 cup. rice flour, 1 cup. sweet starch, 1/2 cup. buckwheat)
1 egg
1 tbsp. salt-ammonia
1 tsp. baking powder
1 tsp. xanthan gum
5 tbsp. warm water
1/3 cup of BOILING MILK lactose free
Preparation:
Make the league: In a bowl, mix the warm water (5 tablespoons) and x. gum. Reserve.
In a bowl, place the flour, baking powder, egg and molasses. Reserve.
Place the salt-ammonia into a cup and then immediately add the boiling milk, stir constantly and notice a foam forming and overflowing of your cup. Pour all the liquid and foam without stopping to stir. Mix everything until it reaches the consistency.
Roll out the dough on a flat surface and cut it.
Bake in preheated oven at 190C/370F for 15 minutes.
